Wonderful Brownies
Egg replacement to equal 2 eggs
6 tablespoons unsweetened cocoa powder
1 cup brown sugar, packed
1/2 cup unsweetened applesauce
1 teaspoon vanilla
3/4 cup barley flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Preheat oven to 350 deg. Very lightly grease 8 x 8-inch pan (may use parchment paper instead if desired).
In a large bowl mix together the egg replacement, cocoa powder, sugar, applesauce and vanilla. In a medium bowl whisk together the barley flour, baking powder, baking soda and salt. Gradually add the flour mixture to the wet mixture, mixing well. Pour the batter into the prepared pan. Bake for 30-35 minutes or until cake tester comes out clean. Let cool.
