Ingredients:
- 1/2 cup water
- 1 onion, chopped
- 1 tsp minced fresh garlic
- 1 green bell pepper, chopped
- 1 15 oz. can chopped tomatos
- 1 Tbsp. Soy sauce
- 2 Tbsp. chopped canned green chilies
- 4 cups cooked brown rice
- 2 Tbsp. sliced black olives (optional)
- 1 tsp. chili powder
- 1/2 tsp. ground cummin
- several dashes of Tabasco sauce (optional)
Instructions:
- Place the water in a large pot and add the onion, garlic and green pepper.
- Cook, stirring frequently, for 5 minutes. Add the tomatoes, soy sauce, and chilies.
- Mix well. Stir in the rice and mix again. Add the remaining ingredients and cook for 15 minutes.
