Southwest Black Bean Soup

Servings: 4-6

Ingredients:

1 medium white onion, chopped
1 red bell pepper, chopped
2 cloves garlic, minced
3/4 cup vegetable broth, divided
1 cup water
1 can fire roasted dice tomatoes
1 15 oz. can black beans
1 cup frozen corn (roasted corn is even better!)
1 Tbsp. chili powder
1 tsp. cumin
1/2 tsp. salt

Directions:
  1. In a large saucepan, saute the onion, red bell pepper and garlic in 1/4 cup of vegetable broth for about 5 minutes.
  2. Add the rest of the ingredients and bring to a boil, then reduce heat and simmer for about 20 minutes.  You may want to use a potato masher to mash some of the black beans (optional).
