Hungarian Mushroom Soup
Ingredients:
12-16 oz. fresh mushrooms, chopped
2 cups onions, chopped
3 Tbsp. unbleached flour
1 cup soy milk
2 tsp. dill weed
1 Tbsp. paprika
1 Tbsp. Tamari soy sauce
1 tsp. salt
2 cups vegetable broth
2 Tbsp. fresh lemon juice
1/4 cup fresh parsley, chopped
Red Pepper Flakes to taste
Directions:
- Sweat mushrooms over medium heat until they begin to soften. Drain mushrooms and set aside.
- Sweat onions in a little of the vegetable broth until they are tender crisp.
- Add mushrooms and remaining ingredients and cook over medium heat until soup begins to boil and thicken.
