Ingredients:
- 1 cup whole wheat flour
- 1 1/4 cup quick oatmeal
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/2 cup unsweetened applesauce (replaces butter in original recipe)
- 1 cup splenda (or other sugar substitute)
- 1 tbsp. flaxseed meal, 3 tbsp. water (replaces egg in original recipe)
- 1/4 cup non-fat or low-fat soy milk
- 1/2 cup raisins
Instructions:
- Preheat oven to 350 degrees.
- Combine first 6 dry ingredients and raisins in bowl.
- In separate bowl, mix applesauce, splenda, flaxseed meal, water and soy milk.
- Poor wet ingredients in with dry ingredients and mix well.
- Drop spoon size amount of batter on baking sheet
- Bake 10-12 minutes
