Vegetable Kabobs (with Marinade)

Notes: The veggies I like best are red and green bell pepper, zuchinni, yellow squash, mushroom and red onion. Feel free to use any veggies you like. The marinade can be prepared in advance and held covered in the refrigerator for up to 7 days.
- 1/2 cup vegetable broth
- 1/2 cup lemon or lime juice
- 1/4 cup water
- 1/4 cup Dijon mustard
- 2 Tbsp. maple syrup
- 2 Tbsp. minced garlic
- 1 Tbsp. basil
- 1/2 tsp. salt
- 1/2 tsp. black pepper
Directions:
- Whisk together all ingredients in a small bowl.
- Put all your veggies in a large ziploc and then pour marinade over veggies. Close ziploc and make sure all veggies are well covered.
- Let marinade for at least an hour, overnight is best.
- Soak wooden skewers in water while veggies marinade.
- Slide veggies on skewers. (you might include pineapple on the skewers, just don't put them in the marinade)
