Scrambled Eggs

Ingredients:

1 pkg. extra-firm tofu, drained and pressed
3 Tbsp. nutritional yeast
1 tsp. garlic powder
1 tsp. onion powder
1/4 tsp. turmeric
1/4 tsp. ground cumin
1/4 tsp. ground curry

Instructions:

  1. Make sure to press tofu to remove as much moisture as possible.
  2. Combine all dry ingredients into a medium size bowl and whisk together well.
  3. Crumble pressed tofu into bowl with your hand and then mix well with the dry ingredients coating the tofu well.
  4. Cook over medium-high heat for about 8-10 minutes, stirring occasionally so tofu doesn't burn.


Notes:  You can add vegetables to make it even better (i.e. bell pepper, onion, mushroom, etc.) and cook with the tofu.
