Quinoa Salad with Black Beans and Mango
Sorry, we somehow did not get a picture of this salad. This recipe is adapted from the book Appetite for Reduction by Isa Chandra Moskowitz.
Servings: 4-6
Preparation Time: 35 min; 15 min if quinoa is already cooked.
Ingredients:
1 Mango, peeled and diced
1 red bell pepper, seeded and finely chopped
1 jalapeno pepper, seeded and finely chopped
1 cup green onions, chopped
1 cup cilantro, chopped
2 Tbsp. seasoned rice vinegar
1/2 tsp. Kosher salt
2 cups cooked quinoa, cooled
1 15 oz. can black beans, drained and rinsed
1 package Baby Romaine lettuce
Directions:
1. Combine mango, peppers, green onions and cilantro in a mixing bowl. Add seasoned vinegar and salt and stir to combine.
2. Add quinoa and stir until well blended. Fold in black beans.
3. Serve individual salads on a bed of baby romaine.
Notes:
You can use Trader Joe's Frozen Mango Chunks.
May be served immediately or refrigerated and served chilled. The chilled salad tastes great, but preference is to serve it at room temperature.
