Pumpkin Spice Muffins
This recipe is from the Fat-Free & Easy book by Jennifer Raymond.
Makes about 12 muffins.
Ingredients:
2 cups whole wheat flour or whole wheat pastry flour
1/2 cup sugar
1 tbsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt (optional)
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 15oz. can solid-pack pumpkin
1/2 cup water
1/2 cup raisins (optional: My family doesn't care for the raisins so I leave them out).
About 1/2 cup of unsweetened applesauce. This is used to "oil" the muffin pan.
Directions:
Preheat the oven to 375. Mix flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl. Add the pumpkin, water and raisins and stir until just mixed.
Take the applesauce and put it on a paper towel and then apply it liberally to each muffin slot in the muffin pan (Optionally: you could skip this part and just use the cupcake papers instead.) Put mixture evenly across 12 muffin slots. Bake 25 to 30 minutes, until the tops of the muffins bounce back when pressed lightly. Let stand 5 minutes before removing from the pan. I use a large spoon and work it around the muffins to get the muffins out of the pan.
