Mayan Couscous
Ingredients:
1 cup couscous
1/2 tsp. cumin
1 tsp. salt
1 3/4 cup hot water
1 garlic clove (minced)
1 15 oz. can black beans
1 cup corn (frozen or canned)
1/2 cup finely chopped red onion
1/4 cup fresh cilantro chopped
1 jalepeno pepper, minced
3 Tbsp. lime juice
Instructions:
1 cup couscous
1/2 tsp. cumin
1 tsp. salt
1 3/4 cup hot water

1 15 oz. can black beans
1 cup corn (frozen or canned)

1/4 cup fresh cilantro chopped
1 jalepeno pepper, minced
3 Tbsp. lime juice
Instructions:
- Put hot water into a 2 quart saucepan and add couscous, cumin, salt and garlic.
- Bring to a boil and then reduce heat to medium-low and cover.
- Let simmer for about 12 minutes until liquid is absorbed.
- Just before the couscous is finished, add the rest of the ingredients in with couscous until warmed.
- Dish can be served warm or cool. (great the next day!)
