Feta Cheese

Ingredients:
1 lb. extra-firm tofu
2 Tbsp. water
4 tsp. yellow miso paste
1/4 cup red wine vinegar
1 Tbsp. lemon juice
1 tsp. salt
2 tsp. basil, dried
1 tsp. oregano, dried
1/4 tsp. rosemary, dried
2 Tbsp. nutritional yeast flakes

Directions:
- Break tofu into medium size chunks in a mixing bowl.
- In a separate bowl, mix together all remaining ingredients.
- Pour over tofu and mix with your hands.
- Let it soak up the flavors for about 15 minutes.
- Refrigerate any leftovers.
