Biscuits and Gravy

Biscuit Ingredients:
Makes 14-16 biscuits.
  • 2 cups unsweetened plain almond milk
  • 2 Tbsp. lemon juice
  • 1 tsp. imitation butter flavor
  • 4 cups white whole-wheat flour
  • 2 Tbsp. baking powder
  • 1 tsp. baking soda
  • 1 1/2 tsp. sea salt


Biscuit Instructions:
  1. Preheat oven to 450 degrees.
  2. In a bowl mix together milk, lemon juice and butter flavor.
  3. In a large bowl mix together all dry ingredients.
  4. Make a well in the dry ingredients and using a wooden spoon, gently pour almond milk mixture in 1/4 a cup at a time (you may not use all the milk).  Continue to do this until you have a sticky dough.
  5. Turn onto a lightly floured surface and dust the top of the dough with flour.  Gently turn over 5-6 times, lightly kneading.
  6. Form into a 1-inch thick disc, handling as little as possible.
  7. Use a glass upside down or something to cut out biscuits and put on a baking sheeting.  Make sure biscuits are touching, this will help them rise. 
  8. Press a small divot into the center of each biscuit, this will help them rise evenly so they won't form a dome.
  9. Bake in 450-degree oven for 12-15 minutes or until fluffy and done.

Gravy Ingredients:
  • 4 cups non-dairy milk
  • 1/2 cup whole-wheat pastry flour
  • 4 non-meat sausage patties (I use Morning Star Farms - Original Sausage Patties which can be found in the frozen section of most grocery stores.  Note:  these do have oil so use somewhat sparingly).  Microwave on high for 1-minute then break them up into crumbles.
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1 Tbsp and 1 tsp. corn starch
  • 1 tsp. "Hickory" liquid smoke
  • 1/2 tsp. salt
  • ​pepper to taste

Gravy Instructions:
  1. Whisk all ingredients together in a large skillet, except sausage and pepper.
  2. Turn heat up to med-high and bring to a boil while continually whisking.
  3. Once boiling, reduce heat to medium and add in sausage, continually whisking.
  4. Once gravy has thickened to desired consistency, add pepper to taste.
  5. Serve over warm biscuits!!!
