Potato Salad
This is recipe is from my favorite book The Happy Herbivore, by far one of the best cookbooks on the planet. GET IT!!
Servings: 6
Ingredients:
1 lb. red potatoes, diced
2 Tbsp. Dijon mustard
1/3 cup mayonnaise substitute
1/4 cup fresh dill, chopped
1-2 tsp. lemon zest
pepper to taste

1 lb. red potatoes, diced

Instructions:
- Bring a large pot of water to a boil.
- Add potatoes and cook until fork-tender.
- Immediately rinse potatoes with cold water and allow to completely cool.
- Once room temperature, mix all ingredients, except pepper in a large bowl.
- Add pepper.
- Chill before serving.
