Black Bean Veggie Burgers
This recipe was adapted from one I found on allrecipes.com.
Prep time: 15 min.
Cook time: 20 min.
Servings: 4 ( double it and then freeze the extras)
Ingredients:
1 16 oz can of black beans, drained and rinsed
1/2 green bell pepper, cut into 2 inch pieces
1/2 onion, cut into wedges
2 cloves garlic, peeled
1 egg replacer, either EnerG or 3 Tbsp. water with 1 Tsbp. flaxseed meal
1 Tbsp. chili powder
1 Tbsp. cumin
1 tsp. chili sauce or hot sauce (optional)
1/2 cup bread crumbs
Directions:
1. If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F (190 degrees C) to keep burgers from sticking to baking sheet, I line the baking sheet with parchment paper.
2. In a medium bowl, mash the black beans with a fork until they are a paste.
3. In a food processor, finely chop the green pepper, onion and garlic and then mix in with mashed beans.
4. In a bowl, mix the egg replacer, chili powder, cumin and hot sauce. Once it is mixed together well, mix it in with the bean mixture.
5. Usually the burgers don't hold well together so add in the bread crumbs until the mixture sticks together and you can mold them into patties. This recipe should make about 4 patties.
6. If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on baking sheet, and bake about 10 minutes on each side.
