Banana Nut Muffins
Ingredients:
Directions:
- 3 ripe bananas
- 1/2 cup soy milk or almond milk and 2 Tbsp. lemon juice stirred together
- 1/2 cup stevia
- 1 tsp. vanilla extract
- 1 1/2 cup whole wheat pastry flour or spelt flour
- 1 tsp. baking soda
- 1/2 tsp. sea salt
- chopped walnuts (optional)
Directions:
- Preheat oven to 350 degrees.
- Blend all wet ingredients together in a bowl.
- Blend all dry ingredients together in a different bowl.
- Pour wet ingredients into dry ingredient bowl and mix thoroughly.
- Spoon into muffin pan (should be the appropriate amount for 12 muffins).
- Bake 20-25 minutes.
