Banana Nut Muffins

Ingredients:
  • 3 ripe bananas
  • 1/2 cup soy milk or almond milk and 2 Tbsp. lemon juice stirred together
  • 1/2 cup stevia
  • 1 tsp. vanilla extract
  • 1 1/2 cup whole wheat pastry flour or spelt flour
  • 1 tsp. baking soda
  • 1/2 tsp. sea salt
  • chopped walnuts (optional)

Directions:
  1. Preheat oven to 350 degrees.
  2. Blend all wet ingredients together in a bowl.
  3. Blend all dry ingredients together in a different bowl.
  4. Pour wet ingredients into dry ingredient bowl and mix thoroughly.
  5. Spoon into muffin pan (should be the appropriate amount for 12 muffins).
  6. Bake 20-25 minutes.
